Arkansas Tomato Rice Vegan & Gluten Free

 
This cupcake is in honor of the great state of Arkansas.
This vegan & gluten free cupcake is made with an unusual mix of tomato and sweet spices to bring a wonderful tasty treat.  The cupcake is frosted with a tomato "buttercream" as well.  This sweet and moist  cupcake sounds weird, however it tastes similar to a carrot cupcake but with a twist.  The Arkansas state fruit is the South Arkansas Vine Ripe Pink Tomato (hard to find this time of year) and the state grain is rice.  This cupcake is made with both of these.  A cupcake a day brings sweet bliss your way.
