Kentucky Blackberry



The state of honor this week is Kentucky.  The bluegrass state is known for its rich soils and pastures producing the state fruit, the blackberry, and great race horses.  The Kentucky Derby is held the first Saturday in May each year.  Hats are a tradition at the Derby and I always reminisce about the memorable race scene in My Fair Lady (although that scene was the Ascot).  This vanilla cupcake is filled with a rich fresh blackberry ganache and topped with a blackberry buttercream and more fresh blackberries.  A cupcake a day brings sweet bliss your way.
