In honor of Arizona, our state of the week, is this prickly pear cupcake. This mild sweet fruit (shown in picture) is part of the cactus plant. The stunning natural pink color of the filling and buttercream is only from the fruit and not enhanced with food coloring! This is a vanilla cupcake filled with a prickly pear ganache and topped with a prickly pear buttercream. Sweet and delicious, it takes me back to Scottsdale. A cupcake a day brings sweet bliss your way.
