Chocolate Walnut VGF

 
 Growing up we always had nuts in the house for snacks.  It was fun to crack nuts with my dad and have the pleasure of getting the reward inside.. a fresh nutmeat that had not seen the light of day.  Walnuts were one of my favorites as the challenge was to try to remove the nuts without breaking them.  My dad was much better than I was at doing this!  This cupcake is made with ground walnuts held together with other ingredients at just the rights proportions and then topped with a vegan and gluten free "buttercream".  This cupcake always takes me back to cracking nuts with my dad...  A cupcake a day brings sweet bliss your way.
